Ingredients

  • 2/3 cup pumpkin canned or cooked
  • 1/2 cup honey
  • 1/4 cup avocado oil
  • 2 tsp vanilla extract
  • 4 cups rolled oats
  • 2/3 cup whole wheat flour
  • 1 cup sliced almonds
  • 1/4 cup brown sugar
  • 1 tbsp pumpkin pie spice
  • 1 cup golden raisins

Instructions

  • Preheat oven to 300 degrees F.
  • In a small saucepan, combine the pumpkin, honey, and oil. Heat gently over a low flame until the honey is liquefied, stirring occasionally. Remove from heat and add vanilla extract.
  • In a large mixing bowl, combine the oats, flour, almonds, brown sugar, and spices.
  • Pour the pumpkin mixture over the oats and stir gently just until combined; leave some clumps intact.
  • Divide the mixture between two 9x13" baking pans or use one large, rimmed baking sheet. Bake for 45-60 minutes, stirring every 15 minutes until done.
  • Stir in golden raisins. Cool completely in pans, then transfer to an airtight container and store at room temperature for up to 1 month.

Notes

To make your own pumpkin pie spice, combine:
1-1/2 tsp ground cinnamon
3/4 tsp grated nutmeg
1/2 tsp ground cloves
1/4 tsp ground ginger
